Zucchini Hash



Occasionally the Food Network pays off. I was fortunate to catch Sunny Anderson's recent show where she presented this tasty side dish. This one is a definite keeper.



Here's what you'll need:

- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 1/2 pound zucchini
- 1/2 pound yellow squash
- 1/2 red onion
- 1/4 cup chives, cut into 1/2-inch pieces (green onions will work too)
- salt to taste
- pepper to taste

Cut the zucchini and squash into cubes and place in a bowl. Then dice the red onion and add to the bowl.



In a large skillet, heat oil and butter over high heat. Add zucchini, squash, and onion. Cook until softened and golden, about 10 minutes.



Remove from heat and mix in chives (or green onions). Season with salt and pepper, to taste. Isn't it pretty?!!
