Pot Roast Sandwiches

While I was on a layover a little over a year ago, I decided to grab a bite for lunch before my plane boarded. There was a small little restaurant whose claim to fame was their pot roast sandwich. Despite its very simple ingredients, the sandwich was delectable! I decided to try it out on my own, and needless to say, I was quite pleased!

Here's what you'll need:

  • chuck pot roast
  • 1-2 carrots
  • 1 yellow onion
  • 5 beef boullion beef cubes
  • seasoning salt
  • garlic powder
  • pepper
  • mayonnaise
  • kaiser rolls

Place the roast in a large crock pot and season it generously with seasoning salt and garlic powder. Add boullion cubes and chopped onions.

Fill the crock pot with water to the point where the water is 1" above the top of the roast. Slow cook the roast on low for 8 hours.

Using a large colander, strain the juices from the roast and onions. Manually shred the roast. (Careful! It will be hot!) Wash and peel carrots. Using a cheese grater, grate carrots.

Spread mayonnaise on both sides of a sliced kaiser roll. Spoon shredded roast onto roll. Sprinkle with shredded carrots and a few shakes of pepper. Enoy!
